The Imori-dani Story
When visiting Imori-dani in Ajimu—famed for its great rice—the toji (master brewer) decided to cultivate the rice themselves. From planting in early summer to harvesting the golden rice ears, the toji waited patiently. “Combine this rice with our brewery’s underground water and you’ll get wonderful sake!” The toji’s conviction was unwavering. And indeed, the result is a meticulously crafted masterpiece.
